Discover the limited edition project we have been working on for years. A Bulgarian Virgin Oak Barrel exported to South Africa. With a least a six month aging process of the some of the most fine Merlot grapes that can be found in South Africa. This Reserve series shows a exceptional character of a unique oak species that brings a subtle but yet distinct flavor profile. The medium char burn on the barrel gives rise to some sweet caramel tobacco notes where the Merlot balances it out with its strong fruit forward mouthfeel. This is a true testament to the Mafia charm and elegance the Don Penguin brings to the table.

If you are a collector, this is truly one a one-of-kind product in the world. This is the only South African Merlot that has used a unique Bulgarian (Balkan) Oak Species for the aging process. No one else in history has done this according to our research.

Tasting Notes

• Appearance: Deep Ruby Red .
• Aromas: Dark chocolate aromatic, with a slight wood tint, almost like sweet tobacco. 
• Palate: Full body, with balanced acidity, slight barrel feel on the top of the palate
• Texture: Smooth and vibrant with 
• Finish: Long, poised and mineral-driven, echoing the quartz seam that defines its origin.

Food Pairing

Pairs beautifully with seared scallops, butter-poached lobster, roasted poultry or creamy truffle pasta.
Serve slightly chilled at 10–12 °C in a large-bowled Chardonnay glass. Allow the wine a few moments to open and reveal its intricate layers.
